Dabeli Masala powder is a special blend of aromatic spices mixture that is used to make Dabeli. It is an essential element in the preparation of Dabeli and it gives it an authentic taste and flavor that’s so typical of Gujarat.
INGREDIENTS :
(1) 1 teaspoon Cumin Seeds (Jeera)
(2) 3 teaspoons Coriander Seeds (Akkha Dhaniya)
(3) 1 teaspoons Fennel Seeds (Saunf)
(4) 3/4 teaspoon Black Peppercorn (Kali Mirch)
(5) 2 Bay leaves (Tej Patta)
(6) 2 inches sized Cinnamon Stick (Dalchini)
(7) 1 Black Cardamom (Badi Elaichi)
(8) 5 Cloves (Lavang)
(9) 2 teaspoons Sesame Seeds (Safed til)
(10) 1 teaspoon Kashmiri Red Chilli Powder (Lal Mirch powder)
(11) 1/4 teaspoon Turmeric Powder (Haldi powder)
I have shown Sugar and Salt too in the picture, however did not add this at this stage of preparation of the Dabeli powder, but added it to the Potato filling for Dabeli that I will show in the Dabeli recipe.
METHOD :
(1) Heat a wok / kadhai on the gas stove using a slow flame. Put Sesame Seeds in the wok. Dry roast it till it slightly changes colour. Transfer it in a deep bowl.
(2) Then dry roast Cumin Seeds, Coriander Seeds, Fennel Seeds, Black Peppercorn, Bay leaves, Cinnamon Stick, Black Cardamom, Cloves, until they are fragrant and slightly change colour. Transfer to the same deep bowl in which you took the Sesame Seeds.
(3) Allow the mixture to cool down.
(4) Then, transfer the mixture to the grinding jar and grind to make a coarse powder.
(5) Now add the Kashmiri Red Chilli Powder and Turmeric Powder and grind for a few seconds just to mix.
(6) Transfer the mixture in a bowl.
(7) You may also store the masala in an airtight container. Refrigerate for upto a month.
