Spring Onion Egg Stir Fry / Spring Onion Egg Bhurji

Spring Onion Egg Bhurji is an Indian Style of Scrambled Egg prepared using Spring Onion.
 
I rarely find Spring Onions Flowers in the market. When I got hold of a bunch of them this winter, I prepared this quick and simple egg bhurji / stir fry that has a unique taste due to the Spring Onions. This healthy side dish goes well with Rice Dal  / Rotis.
 
The Spring Onions give a vibrant green colour to any dish that you prepare using them. They are very nutritious being a very good source of dietary fibre and Vitamin C.
 
 
Spring Onion Flowers
 
 
INGREDIENTS :
 
(1) 3 Eggs
(2) 1 cup of chopped Spring Onion 
(3) 2 medium sized Onions, finely chopped
(4) 1 large Tomato, finely chopped
(5) 1 inch sized Ginger, finely shopped
(6) 2 green chillies, minced
(7) Coriander leaves, finely chopped
(8) 1 teaspoon of Kitchen King Garam Masala powder
(10) 1 teaspoon of Cumin Seeds / Jeera
(11) Half teaspoon of Turmeric powder / Haldi
(12) Mustard Oil for cooking
(13) Salt as per taste required
 
PREPARATION :
 
(1) Wash the Spring Onions thoroughly to remove any dirt sticking to the Spring Onions greens along with flowers. Cut the stalks into 1 cm sized pieces.
(2) Chop two medium sized Onions finely.
(3) Chop 1 large Tomato finely.
(4) Chop 1 inch sized ginger finely.
(5) Mince two green Chillies.
(6) Finely chop Coriander leaves for garnishing.
(7) Beat 3 Eggs in a bowl and add small amount of salt and whisk it well. Keep aside.
 
Set all ingredients for the preparation of Spring Onions Egg Bhurji / Stir Fry
 
 
 
METHOD :
 
(1) Heat Mustard Oil in a Kadhai / Wok.
 
 
(2) Add Cumin Seeds / Jeera to the warm oil and allow it to splutter.
 
 
(3) Add chopped Ginger and sautéed for a minute till the raw smell of it goes away.
 
 
(4) Add chopped Onions and saute till they turn golden in colour.
 
 
 
(5) Add minced green chillies and mix well.
 
 
 
(6) Add chopped Tomatoes and saute for a minute.
 
 
 
(7) Add Turmeric powder and mix well.
 
 
 
(8) Add the chopped Spring Onion greens and mix well.
 
 
 
(9) Add Salt as per taste required and mix well.
 
 
(10) Cover the lid of the kadhai and cook for 10 minutes.
Keep stirring in between.
 
 
(11) After 10 mins of cooking, open the lid and add some garam masala powder and mix well.
 
 
 
(12) Inside the kadhai, pull aside the entire spring onion stir fry and make place in the kadhai.
 
 
(13) Add 3 table spoons of oil.
 
 
(14) Add the beaten eggs and whisk well till the eggs are cooked as shown.
 
 
 
 
(15) Mix the scrambled eggs with the spring onions.
 
 
(16) Sprinkle chopped Coriander leaves and mix well.
 
 
 
(17) The Spring Onion Bhurji or Spring Onion Egg Stir Fry is ready.
 
 
(18) Transfer the Bhurji on a serving bowl.
 
 
 
(19) Garnish with Coriander leaves.
 
 
 
(20) The Sabzi can be eaten with Chapatis as shown.
