Avocado paratha is an Indian flatbread prepared from a dough formed by kneading wheat flour with avocado pulp along with rest of the ingredients. They are an excellent breakfast recipes, or a quick dinner recipe. They can be packed for kid’s tiffin box or for parties and picnics as snacks.
Avocado is a pear shaped fruit with a long, slender neck and the colour ranges from green to dark purple. Botanically, the fruit is a berry and has a single large round seed in it.
Avocado is rich in Vitamin A, B, C, E, K and traces of minerals including Magnesium and Potassium. It also contains good amount of dietary fibre and healthy fat.
INGREDIENTS :
(1) Pulp from 1 Avocado
(2) Wheat flour – I used 175 grams. (The wheat flour needed depends on the moisture due to Avocado and other ingredients.)
(3) 1 teaspoon of Cumin seeds (Jeera)
(4) Half teaspoon of Black Pepper powder (Kali mirch powder)
(5) 1/4 teaspoon of Turmeric powder (Haldi)
(6) 1/4 teaspoon of Asafoetida (Hing)
(7) 1 teaspoon of Garlic paste
(8) 1 teaspoon of Ginger paste
(9) 2-3 tablespoons of lemon juice
(10) Salt as per taste required
(11) 1 cup of chopped Coriander leaves (Dhaniya patta)
(12) 2 tablespoons of chopped Mint leaves (Pudina patta)
(13) Oil to drizzle on the parathas while frying
METHOD :
(1) Take a ripe Avocado and slice it into two halves. Remove the seed and scoop out the pulp of the Avocado using a spoon.
(2) Put the Avocado pulp in a large bowl.
Mash it using a potato masher.
(3) To the mashed Avocado, add chopped Coriander and Mint leaves, Cumin seeds, Black Pepper Powder, Turmeric Powder, Asafoetida powder, Garlic paste, Ginger paste, Lemon juice and Salt. Mix well. Lemon juice is added to prevent the oxidising of the Avocado.
(4) Now add the whole wheat flour gradually. The amount of flour you will need to add depends on the Avocado pulp that you have and the moisture due to rest of the ingredients. I used 175 grams of wheat flour. DO NOT ADD WATER while kneading the dough as that would cause the dough to be too moist and sticky that it will be then difficult to roll the parathas.
(5) Knead all the ingredients to form a smooth but firm dough. Once done, cover and keep the dough to sit for 10 minutes before making the parathas.
(6) After 10 minutes, knead the dough for a minute. Now form small balls of the dough by dividing the dough into equal parts. I got 8 balls.
(7) Roll the ball to form the paratha. If the paratha is sticking while rolling then sprinkle little wheat flour on this and it will help to roll well. Make sure you dust off the flour before placing the paratha in the pan for frying.
(8) I was able to form almost a round paratha but sometimes it is not exactly round, so for making it round I used a ring as shown to mould out a round paratha. After trimming the parathas, the dough from the edges that got removed was also used to form a ball and in all I got 15 balls then.
(9) Now heat a Tawa / Skillet on a low to medium flame and once it is ready, place the paratha over the Tawa. After a 10 – 15 seconds, flip the paratha and let it warm both sides this way.
(10) Then let the paratha puff in different places of it and when you see a colour change, like when golden brown spots appear on them, add half teaspoon of oil on each side.
(11) Keep flipping and cooking both sides until you get well cooked parathas.
(12) Transfer the paratha to a plate.
(13) Repeat the remaining parathas.
(14) I got 15 Avocado parathas out of the dough formed. Each paratha was of 5 inches diameter.
(15) Serve the Avocado parathas with any vegetable gravy based curry. You may simply serve with the pepper flavoured Curd.
