Strawberry Lassi

Lassi is a yogurt based drink that originated from India. You can find Lassi stalls almost everywhere in India. Depending on the place or purpose, Lassi can be sweet or sour drink. Strawberry Lassi is one of the best variations of Lassi.
Strawberry lassi is an easy to make drink that is prepared by blending fresh strawberries with Yogurt and milk, and flavoured with Cardamom powder. Lassi is served after a heavy meal. So, if you want to replace your carbonated drinks with something healthier and tastier, you can prepare sweet strawberry lassi in just a few minutes.

INGREDIENTS :

(1) 14 strawberries, chopped into pieces
(2) 10 teaspoons of Sugar (As per need)
(3) 300 grams of Yogurt / Curd / Dahi
(4) 300 ml of Milk (Full Cream Milk would give better results, however I have used the toned one)
(5) Half teaspoon of Cardamom powder
(6) 1 Strawberry for garnishing, chopped into pieces
(7) 2 Strawberries for decorating the serving glass (Optional)

Note :

  • Take boiled and Chilled Milk
  • Take chilled Curd
  • You may cool the Strawberries in the fridge before preparing Lassi. In that case, you will not need the ice cubes.

METHOD:

(1) Rinse and wash the Strawberries. Here I have taken 14 strawberries for lassi, 1 strawberry for garnishing and 2 strawberries for decorating the serving glass.

(2) Hull the 14 strawberries and chop into small pieces. 

Slicing off the green leafy part is called hulling the strawberries.

(3) Add the chopped Strawberries into the blending jar / grinding jar of a mixer grinder.

(4) Add 10 teaspoons of Sugar.

(5) Cover the lid of the blending jar.

Blend for 30 seconds or more to form a smooth puree of Strawberries. If it gets stuck while blending, open the lid and stir with a spoon and blend again. 

The Strawberries will release its water and you can easily blend them. I have not added milk and curd at this stage as that will cause the Strawberries to remain coarse and not puree.

(6) Once the puree of strawberries is formed, add 300 grams of Curd.

(7) Add 200 ml of boiled and cooled milk.

(8) Add half teaspoon of Cardamom powder.

(9) Blend for 30 seconds.

(10) Add remaining milk and churn till frothy.

(11) Smooth and frothy Strawberry Lassi is ready.

(12) Pour the Strawberry Lassi in a serving glass.

(13) Decorate the serving glass with a strawberry.

(14) Garnish the Strawberry Lassi with chopped Strawberries.

(1) Strawberries are low in calories, delicious, and healthy.

(2) Strawberries are a good source of vitamin C, manganese, folate (vitamin B9), and potassium. They contain small amounts of several other vitamins and minerals.

(3) Strawberries are very rich in antioxidants and plant compounds, which may have benefits for heart health and blood sugar control

(4) Strawberries carbs consists mainly of fibers and simple sugars. They have a relatively low GI and should not cause big spikes in blood sugar levels.

Usually consumed raw and fresh, these berries can also be used in a variety of jams, jellies, and desserts.
