Khajur Imli Chutney or the Dates Tamarind Chutney is sweet, sour and spicy chutney made from Dates, Tamarind, Jaggery and Spices. This sweet chutney is an essential accompaniment in any Chaat recipes, Samosas, Dabeli, and many more.
INGREDIENTS :
(1) Half cup / 12 pieces of Dates (Khajur), deseeded
(2) 1/4 cup / 35 grams of Tamarind (Imli), deseeded
(3) 1/4 cup / 100 grams of Jaggery
(4) 1/4 cup of Water
(5) 2 teaspoons of Coriander seeds (Akkha Dhaniya)
(6) 1 teaspoon of Cumin Seeds (Jeera)
(7) 1 inch sized piece of Ginger (Adrak)
(8) 3-4 green chillies (Hari Mirch) or as per spicy taste required
(9) Black Salt to taste

Time : 35 minutes (30 minutes for soaking Dates and Tamarind and 5 minutes for grinding)
METHOD :
(1) Deseed the Dates and Tamarind.
(2) Wash the Dates and Tamarind to clean them and drain away the water.
(3) Soak the Dates and Tamarind separately in warm water for 30 minutes.
(4) Rest of the ingredients are shown. They are Black Salt, Coriander seeds, Cumin seeds, Ginger, Green Chillies.
(5) Take the soaked Dates and Tamarind in the grinding jar. You may drain away the water used for soaking or may use it while grinding.
(6) Add the coarsely grated Jaggery.
(7) Put the green chillies too
(7) Add Coriander seeds and Cumin seeds.
(8) Add in some chopped Ginger pieces.
(9) Add a small amount of Black Salt.
(10) Add a small amount of water or may not use if you want thick chutney.
(11) Grind the mixture to form a smooth paste.
(12) Our Dates Tamarind Chutney or Khajur Imli Chutney is ready.
(13) Transfer the chutney in a serving bowl.
(14) You may also store the Dates and Tamarind Chutney in an airtight container and refrigerate until ready to serve.
