Egg Fried Rice

 

 

Today we will learn how to prepare Egg Fried Rice in my easy way using easily available ingredients. This recipe is packed with flavour and is sure to become your favourite.
 
As we are including protein, veggies and carbs all together in this recipe, this can serve to be a complete meal in itself.
 
Before we begin, you need to know that the key ingredient, Cooked Rice has to be chilled or cold. This is because if you use warm or hot rice while making fried rice, it will turn out of be a mushy mess. Chilled rice has time to dry out and the resulting fried rice is never mushy.
 
Also, if you have any doubts about the health benefits of Egg Fried Rice, let me tell you it is all dependant on how you prepare it. Like if you use less oil and add lot of veggies and some eggs (That are rich in protein), it increases the nutritional value of the dish.
 
 
After serving the Egg Fried Rice, refrigerate it immediately by storing it in a sealed airtight container. Next day you may reheat it in a microwave until it is piping hot and relish it. You can also reheat in a skillet on the stove with a little bit of olive oil or butter.
 
 
Here is the list of ingredients needed.
 
INGREDIENTS :
 
(1) 1 cup Rice (Raw) or 3 cups of cooked Rice
(2) 5-8 cloves of Garlic finely chopped
(3) 3-5 Red or Green Chillies, minced (As per spiciness required)
(4) 1 Onion chopped
(5) 1/4 cup of Carrot finely chopped as shown
(6) 1 cup of Cabbage, shredded as shown
(7) 1 cup of Spring Onion leaves finely chopped
(8) 4 Eggs
(9) Oil for cooking
(10) Vinegar (Adjust to taste)
(11) Soya Sauce (Adjust to taste)
(12) Salt as needed

Time : 30 minutes
 
PREPARATION :
 
(1) In a utensil, take water and heat it.
(2) Put 1 cup of raw Rice in the hot water and stir well. Cook until it is al dente (Cooked but does not lose its shape).
 
 
(3) Once the rice is cooked, strain the cooked rice and collect the rice as shown. Let the rice cool completely.
 
 
(4) Chop the veggies (Onion, Cabbage, Carrot, Garlic, Chillies) and set aside.
(5) Break the eggs to a bowl and beat it very well. Set aside.

METHOD :

(1) Place a kadhai / wok on the gas stove and heat it on a medium flame. Take 5-7 tablespoons of cooking oil and allow it to become warm.
Add chopped Garlic and saute till it is lightly fried.
 
 
 
(2) Add chopped Onions and saute till the Onions are golden brown in colour.
 
 
 
(3) Add minced chillies.
 
 
(4) Add chopped Carrot and shredded Cabbage, one by one. Saute for 3-4 minutes. Do not overcook the veggies. They should remain crunchy.
 
 
 
 
(5) Pour half of the beaten eggs from the bowl, add a small amount of salt and scramble them till they are lightly cooked.
 
 
 
 
(6) Add 1.5 cup of cooked rice and mix well.
 
 
 
(7) Add 1.5 cup of remaining cooked rice and mix well. Add more oil for cooking if needed.
 
 
 
(8) Pour remaining beaten eggs over the rice and mix well. Here the egg coats the rice well when you pour over it at this stage.
 
 
 
 
(9) Add 1 cup of chopped spring onion leaves and mix well and roast the egg fried rice on a high flame for 2-3 minutes. Adjust salt as needed.
 
 
 
 
(10) The Egg Fried Rice is now ready.
 
 
(11) Transfer it on a serving bowl.
 
 
 
 
(12) Sprinkle Vinegar and Soya Sauce on the Fried Rice as per your need and relish the dish.
