Pav Upma is one of the simplest and quick to make breakfast or snack item. This recipe was taught to me by my mother with some tips and tricks to make it tastier and healthy. There are many versions of this recipe found on internet, all are great, but this version which I am sharing is made my own way and no adaptation of any recipe. This is how my mom had been making since her childhood. It is not very spicy or masaledaar but is a good blend of healthy ingredients so you won’t face acidity or any problems after eating it. It’s that light on your tummy.
Pav Upma is made by tossing diced Pav with Indian spices, Onions, Coriander leaves and some more healthy ingredients. You can prepare this recipe using bread also if Pav is not available. But believe me, with Pav it tastes super delicious. Now let’s know the ingredients.
INGREDIENTS :
(1) 8 Pav, diced
(2) 4 tablespoons of Coconut oil / Cooking oil
(3) 2 teaspoons of Mustard Seeds
(4) Half teaspoon of Urad Dal
(5) 1 teaspoon of Cumin Seeds / Jeera
(6) Half teaspoon of Asafoetida / Hing
(7) 8-10 Curry leaves, finely chopped
(8) 2 small Onions, finely chopped
(9) 2 green Chillies, slit
(10) 30 ml of Water
(11) Half teaspoon of Turmeric powder / Haldi
(12) 1 teaspoon of Kashmiri Red Chilli Powder
(13) 1 teaspoon of Salt or as required
(14) 2 teaspoons of Sugar or as required
(15) Finely chopped Coriander leaves

PREPARATION :
(1) Finely chop 2 Onions
(2) Finely chop 8-10 Curry leaves
(3) Slit 2 green chillies lengthwise
(4) Finely chop coriander leaves
(5) Break 8 Pav into bite sized pieces with hands (No need of knife or scissor).
METHOD :
(1) Preparation of a Water Solution :
First we will prepare a water solution that we will use while preparing the Upma later.
For that put half teaspoon of Salt in 100 ml of Water. Then, add 1 teaspoon of Sugar in it. Put 1/4 teaspoon of Asafoetida / Hing in it.
Add half teaspoon of Kashmiri Red Chilli Powder in it. Mix well. The water solution is ready.
(2) Add 4 tablespoons of coconut oil into the kadhai. Keep on low flame of the gas stove.
(3) Add 2 teaspoons of Mustard Seeds to the warm oil.
(4) Once the Mustard Seeds splutters, add half teaspoon of Urad dal and allow it to change in colour.
(5) Add 1 teaspoon of Cumin Seeds / Jeera and allow it to change in colour.
(6) Add 8-10 finely chopped Curry leaves.
(7) Add 2 Onions, finely chopped.
(8) Saute until they are aromatic and slightly golden in colour but not too brown.
(9) Add two green chillies, slit lengthwise.
(10) Add 1/4 teaspoon of Asafoetida / Hing.
(11) Add half teaspoon of Turmeric powder / Haldi.
(12) Add half teaspoon of Kashmiri Red Chilli Powder.
(13) Mix well.
(14) Add half teaspoon of Salt or as required.
(15) Add one teaspoon of Sugar or as required.
(16) Mix well and saute for two more minutes.
(17) Add chopped Coriander leaves.
(18) Mix well.
(19) Add dices of Pav.
(20) Mix well.
(21) If you like dry Upma, you may stop at this stage.
(22) If you like wet Upma, then follow further steps.
(23) Hold a ladle upside down and pour the solution we prepared over the ladle.
(24) This way, it helps to sprinkle the solution evenly over the pav. The amount of solution that you add depends on, the number of Pav taken and the moisture that we want to have in the Upma.
(25) Please see how we have to mix so that all the earlier ingredients coats the pav.
Add water solution as per your requirement.
(26) Mix and roast for 2-3 minutes.
Then turn off the gas flame. The Pav Upma is ready.
(27) Garnish with chopped Coriander leaves.
(28) Have it as a breakfast or as an evening snacks.
