Sooji ka Upma, also known as Semolina or Rava Upma, is a popular and simple Indian breakfast dish. It is made using roasted semolina (sooji) as the main ingredient and is often flavored with spices, vegetables, and sometimes nuts. It is a quick and easy recipe that can be prepared in less than 30 minutes. It is very tasty and nutritious as well.

Cuisine : Indian
Course : Breakfast
Serves : 3-4 persons
Time required : 10 minutes to prepare and
15 minutes to cook = 25 minutes

Let’s begin the process.

METHOD :

(1) Heat 600 ml of water in a utensil. Once boiled, keep it aside. We will use only 500 ml of it later.

(2) Place a kadhai / wok on the low to medium flame of the gas stove.

(3) Now add 4 tablespoons or half a cup of ghee.

(4) Add broken cashews to the warm melted ghee. Fry till it is golden brown in colour.

Roast for about a minute or two on a low to medium flame.

Collect the cashews in a bowl once they are golden brown in colour.

Keep the cashews aside.

(5) Add 1 teaspoon of Mustard Seeds (Rai). Allow them to splutter.

(6) Add 1 teaspoon of Urad dal / Skinless Split Black Lentils.

(7) Add a sprig of Curry leaves, finely chopped.

(8) Add two green chillies, slit lengthwise.

Saute for few seconds.

(9) Add 1 cup (150 grams) of Semolina / Rava / Sooji to the tempering mixture.

Mix Sooji well with the tempering mixture.

(10) Add Salt as required.

(11) Add 2-3 teaspoons of Sugar.

Mix well.

(12) Add 500 ml of boiled water. Then, stir well for few seconds to avoid forming lumps.

The ratio of Sooji / Rava and water is 1:3. For one cup of rava, we add three cups of water, measured using same cup for both.

Mix well.

(13) Cover with a lid.

Let it cook approximately for 20 seconds.

Waiting for 20 seconds until the rava / sooji cooks and water dries up.

(14) Open the lid once 20 seconds are over.

Stir well so that the rava doesn’t stick to the bottom of the kadhai / wok.

Mix well and turn off the gas stove.

(15) Our Simple Upma / Rava Upma is ready.

Mix well again to make it fluffy.

(16) Sprinkle roasted cashews and chopped coriander leaves.

Keep some of them for garnishing later.

Mix well again.

(17) Serve the Upma on a serving plate. I served it on a banana leaf.

(18) Now garnish the Upma with the remaining Cashews and chopped Coriander leaves kept aside.

(19) Enjoy the breakfast with delicious Upma.

(20) This much Sooji ka Upma can be served to 3-4 persons.
