Sweet Lassi / Cardamom Lassi / Cardamom flavoured Sweet Lassi

Cardamom Lassi is a chilled Curd / Yogurt based drink, flavoured with cardamom powder and garnished with chopped nuts. Lassi is a traditional drink in the Northern part of India, especially Punjab but it is popular and relished worldwide. Traditionally, it is served chilled in a tall glass.

There are many variation of lassi recipe. 

When we add Salt to the lassi, it is known as Salted Lassi or Chaas. 

You can just add Cardamom powder to the lassi and you get Cardamom Lassi.

When we add fruits to the lassi, we can have variety of lassi like Mango LassiStrawberry Lassi, Kiwi Lassi, Avocado Lassi and many more. 

Lassi is usually consumed during or after a meal and is claimed to offer a range of health benefits, such as aiding digestion and boosting immunity. It can provide your body with calcium, Vitamin D and many essential vitamins. Not only that, it hydrates the body during hot Summer days. However it can be consumed all throughout the year.

INGREDIENTS :

(1) 400 grams chilled Curd / Yogurt
(2) 12 teaspoons of Sugar (You may use honey in place or Sugar). Adjust the amount of sugar as per the sweetness required.
You may use powdered Sugar if you have, and if you don’t have, you may grind the sugar to form powder first before making lassi.
(3) One fourth teaspoon of Cardamom powder (For flavour)
(4) 10-15 ice cubes (Optional)
(5) 2 tablespoons of crushed / chopped Pistachios (For garnish)

Curd / Dahi, Ice cubes, Sugar, Pistachios, Cardamom powder.

METHOD :

(1) Gather all ingredients and a blender / mixer for preparing sweet lassi.

(2) Add 12 teaspoons of Sugar in the blending jar. Adjust Sugar as per sweetness required in the lassi.

Cover the blending jar with its lid.

Grind the Sugar to form a powder. We grind for 20 seconds.

Grind a bit more in case the sugar granules are still coarse.

We use powdered sugar for lassi as this way it dissolves quickly in the curd.

Powdered Sugar is ready.

(3) Now add 400 grams of curd to the powdered sugar.

(4) Add ice cubes as required. I added 15 ice cubes.

(5) Add one fourth teaspoon of Cardamom powder.

(6) Cover and blend for 30 seconds.

Frothy and smooth Sweet Lassi is ready!

(7) Pour the Sweet Lassi into the serving glasses.

(8) Garnish with crushed / chopped Pistachios.

This lassi can also be called as Cardamom Lassi. Enjoy the lassi!

Notes : 

(1) Curd is the key ingredient in the lassi and the taste of the lassi depends entirely on the taste of curd. So make sure that the curd is not sour to get a perfect lassi.

(2) This is a Cardamom flavoured lassi. You may use the readymade or home-made cardamom powder. 

(3) The amount of ice can be adjusted based on the consistency desired. We are adding ice instead of water here for adjusting consistency of the sweet lassi.

(4) Curd that we use here should be absolutely chilled.

(5) You can use a whisk instead of a blender to blend the ingredients.
