Vegetables Omelette is a quick and easy Indian breakfast recipe. It is very convenient to prepare as it does not require any soaking, grinding and fermentation to prepare its batter. These nutritious, flavourful, gluten free, savoury pancakes go well with tea, coffee and any type of chutney and kids love them too. Make your breakfast or evening snacks healthy and super tasty with this Vegetables Omelette .
INGREDIENTS :
(1) 250 gms of Gram flour / Besan
(2) 2 medium sized Tomatoes, finely chopped
(3) 3 medium sized Onions, finely chopped
(4) 1 Capsicum (Green Bell Pepper), finely chopped
(5) 1 inch sized Ginger / Adrak, finely chopped
(6) 15 cloves of Garlic / Lehsun, finely chopped
(7) 4-5 green Chillies / Hari Mirch, minced
(8) 1 sprig of Curry Leaves / Kadi Patta
(9) 1 teaspoon of Coriander powder / Dhaniya powder
(10) 1 teaspoon of Carom seeds / Ajwain
(11) 1 teaspoon of Cumin seeds / Jeera
(12) Half teaspoon of Turmeric powder / Haldi
(13) 1/4 teaspoon of Asafoetida / Hing
(14) Salt as per taste required

METHOD :
(1) Finely chop all the vegetables like Tomatoes, Onions, Capsicum, Ginger, Garlic, green Chillies and Curry leaves.
(2) Take all the 14 ingredients listed in the ingredients list in a large bowl.
(3) Mix them well with the help of a spoon so that all the moisture from the vegetables is absorbed by the Besan before we add water to it.
(4) Now, start adding water in small quantity at a time and form a lump free batter. Do not add all the water at once as that will cause lumps in the batter. The batter should neither be too thick nor too thin. It should be a flowing consistency. Do a taste test to check the salt in the batter.
(5) Once the batter is ready, heat a tawa or pan on a gas stove on medium flame.
Grease the pan with some oil with the help of a basting brush.
(6) Once oil is hot, pour a ladleful of batter and spread it to make round shaped pancake.
Let the Cheela get cooked for about a minute on the side touching the pan. Cover it with a lid. The steam that gets created will help cook the Cheela uniformly.
(7) After a minute, open the lid. Drizzle some oil on top of the Cheela all over and flip the Cheela, upside down using a spatula. The side touching the pan should have become golden brown by now.
(8) Now cook the other side till it turns golden brown too or for 1-2 minutes.
(9) Once both sides are cooked, transfer the Cheela to a serving plate.
(10) Follow the same procedure for making the second Cheela.

(11) Vegetables Omelette / Besan ka Cheela can be accompanied by any kind of chutney or with Tomato ketchup and a hot cup of tea or coffee.

Note : Cook the Cheela on a low or medium flame throughout, but never on high flame. If you cook the Cheela on high flame, it gets brown or black very quickly leaving it uncooked from inside and that will ruin the Cheela.
Use green chillies as per spiciness required to you.
