Banana Stem Coconut Chutney

Each and every part of a banana tree is very healthy and full of nutritional values that can solve many health issues in a human body and helps in its healthy functioning.

The banana stem, banana fruit, raw banana and the banana flower are all used for preparing various recipes that are rich in various nutrients and tasty too.

Banana stem is a rich source of fibres. Its high fibre content creates a feeling of satiation and hence, reduces the intake of food. Thereby it helps in weight loss.  It also helps ease constipation. Banana stem is rich in potassium and vitamin B6.

INGREDIENTS:

For Chutney :

(1) 1 cup of chopped Banana Stem
(2) Half cup of grated Coconut
(3) 1 small Onion, coarsely chopped
(4) 2-4 green Chillies or as per spiciness required
(5) Handful of Coriander leaves
(6) 1 inch sized Ginger (Adrak)
(7) 8 cloves of Garlic (Lehsun)
(8) 1 tablespoon of whole Coriander Seeds (Akkha Dhaniya)
(9) 1 tablespoon of Cumin Seeds (Jeera)
(10) Lemon juice of 1 lemon
(11) Half teaspoon Salt or as required

For Tempering or Tadka:

(1) 2 tablespoons of Coconut Oil or any Cooking Oil
(2) Half teaspoon of Mustard Seeds / Rai
(3) One fourth teaspoon of Asafoetida / Hing
(4) 10 – 12 Curry leaves (1 sprig)
(5) 1 broken whole Red Chilli

PREPARATION :

HOW TO CUT AND CHOP A BANANA STEM?

If you see the cross section on one end of the banana stem, you can see that there is a thick solid inner portion and a fibrous,  netted outer ring portion. The inner portion is edible and is to be consumed and the outer portion is to be removed and discarded.

On the surface of the outer portion, make a cut with a knife and remove the outer rings as shown. It may have 2-3 layers and they are not edible.

Chop the inner portion finely and use it immediately for preparing the recipe. 

If you plan to use the chopped banana stem sometimes later to prepare a recipe, then till that time, immerse them in a lemon water or in a buttermilk to avoid discoloration.

Also, while you cut and chop the inner portion of the banana stem, you will see a lot of fibre coming along with the cut pieces. Remove those fibres with your fingers.

Here is the chopped banana stem.

Using this we can prepare a chutney.

Let’s prepare Banana Stem Coconut Chutney now.

METHOD:

(1) Add all the 11 ingredients given in the ingredients list (for chutney) into the jar of a mixer grinder. Cover the jar with its lid.

(2) Grind the mixture to form a smooth paste.

(3) This smooth paste is the chutney. Transfer it to the serving bowl.

Now, we will prepare a tempering / tadka for it.

(4) Heat 2 tablespoons of coconut oil or any cooking oil in a tadka pan. Keep the flame low.

(5) Add half teaspoon of Mustard Seeds / Rai to the warm oil.

As the oil is quite hot, you can turn off the gas stove at this stage.

(6) When the Mustard Seeds start spluttering, add one fourth teaspoon of Asafoetida / Hing.

(7) Then, immediately add 10 – 12 Curry leaves (1 sprig).

(8) Immediately add 1 broken whole Red Chilli.

Mix well.

The tempering or tadka is ready.

(9) Pour it over the chutney in the bowl.

Our Banana Stem Coconut Chutney is ready.

(10) Serve with any South Indian Combo, like Idli Sambar, Dosas, Medu Vadas, etc.

This chutney is slightly fibrous while eating, but it helps a lot to fight various illnesses and aid weight loss. Hence, please try it out.
