Fruit Salad with ice cream

Fruit Salad with ice cream is a cool and refreshing, healthy and nutritious dessert, made by mixing various fruits and nuts and topped with ice cream.
It is a popular item in the dessert section of the menu of any restaurant in India and loved not only by kids but also by adults.

I have used seasonal fruits here that are fresh, ripe and sweet in taste.
I have not used sugar in this recipe.
I have used Dates as sweetener. If you don’t have Dates, you may use Honey.

INGREDIENTS :

(1) 1 Kesar Mango, chopped
(2) 1 Pomegranate, chopped
(3) 1 Apple, chopped
(4) 2 Sapota (Chikoos), chopped
(5) 5 Apricots, chopped
(6) 1 Banana, chopped
(7) 10 – 15 Cashews (Kaju)
(8) 2 tablespoons of Raisins (Kishmish)
(9) 2 tablespoons of Pistachios (Pista)
(10) 6 Dates (Khajur)
(11) Honey (In case, if you don’t have Dates, you may use honey as sweetener). I did not use Honey, I used Dates only.
(12) 2-3 more Bananas for making puree / milkshake
(13) 200 ml Milk or as required
(14) Rooh Afza Rose Syrup for decoration
(15) Vanilla ice cream

Note : Use Chilled Milk

Note : I have shown both Dates and Honey in the picture. You have to use any one out of these two, If you don’t have Dates, use Honey. Do not use both at the same time. I have used Dates as sweetener and skipped Honey.

PREPARATION :

Chopping fruits and dry fruits:

(1) Chop 1 Kesar Mango, 1 Pomegranate, 1 Apple, 2 Chikoos, 5 Apricots, 1 Banana as shown.

(2) Crush the Pistachios with the help of a mortar pestle.

(3) Break the Cashews.

METHOD :

PREPARING BANANA MILKSHAKE / PUREE AS BASE FOR FRUIT SALAD

NOTE : You may use 2-4 bananas to prepare the base banana milkshake for the Fruit Salad. I have shown two bananas in the picture and I later added one more while grinding, which I have not captured in the video. You may please add bananas as per consistency required.

(1) Put 3 bananas in the jar of the blender.
(2) Add 6 deseeded Dates.
(3) Add 200 ml Milk.

(4) Cover the jar of the blender.

(5) Blend till a smooth puree is formed.

(6) Banana Milkshake or puree is ready.

(7) Refrigerate until chilled.

This puree forms the base of our fruit salad. Due to the presence of banana, milk and dates, this base is really delicious and healthy part of the fruit salad.

PREPARING FRUIT MIXTURE:

(1) Now in a large bowl, add 6 types of chopped fruits.

(2) All chopped fruits added.

(3) Mix well.

(4) Refrigerate until chilled.

ASSEMBLING TO PREPARE FRUIT SALAD:

(1) Gather all ingredients.

(2) Pour chilled banana milkshake / puree into the serving bowl.

(3) Add chopped and chilled fruits mixture in each of the serving bowls.

(4) Add Raisins and broken cashews.

(5) Add Vanilla ice cream.

(6) Decorate with Pomegranate Seeds.

(7) Decorate with crushed Pistachios.

(8) Decorate with Rooh Afza Rose Syrup.

(9) Fruit Salad with ice cream is ready.

Fruits are highly perishable and don’t have a long shelf life once chopped. So, please consume them fresh. 

Ideally eat half an hour or 1 hour before the meal or a couple of hours after the meal.
