Homemade Mawa

Mawa is used as a key ingredient in many sweets in Indian cooking, especially in  the North of India.

Mawa, also known as Khoya is a dried evaporated  milk solids. The milk is slowly simmered on a large open kadhai, till all the moisture evaporates and it reduces to solids. 

Mawa is a rich source of Vitamin D and Calcium, both of which are essential for bone health. It is high in fat and thereby calories too as it is made from full fat milk.

Store bought Mawa is not always fresh or sometimes at some places it is not even available. In that case, one can always prepare Mawa at home perfectly. It is a bit tedious to prepare mawa at home and needs a lot of patience and concentration as it involves continuous stirring and monitoring of the milk. But once prepared, your hurdle to prepare any sweet is crossed. Today I will share with you how to prepare perfect fresh mawa at home.

I have taken 1 litre of full fat Cow’s Milk here. We will take it in a heavy bottom utensil. I have taken a Hindalium Kadhai here. You may use any kadhai or utensil with heavy bottom.

Heat this milk on the gas stove. Initially until it comes to a boil, keep the flame medium to high.

Once boiled, keep the flame to low to medium and keep on reducing it by stirring continuously. Make sure it does not stick to the bottom of the utensil. Also scrape the sides of the utensil and collect the cream / malai formed on the sides of the utensil and mix it with the milk. 

As and when time proceeds, the milk keeps on getting thicker.

Finally, it separates itself from the kadhai (stops sticking to the kadhai) and forms a bulk of thick mawa. Then we will get pure white coloured fresh Mawa in the end.

It took about 1 hour to prepare this mawa. I got 225 grams of Mawa from 1 litre of full fat Cow’s Milk.

You may use it immediately or refrigerate to use sometimes later.

You can use this Mawa within 15 days if refrigerated and used.
